My First Attempt at Flatbread


Well, there they are...those pieces of flatbread. I followed a recipe using graham flour & they did roll out well, but I know that I need a flatbread rolling pin for the next bout.

Our grandson, Kane, seemed to like the one piece he ate in our company...so, it can't be all bad! However, his mom told us that his breakfast wasn't too good, so you be the judge.

The Greatest Chocolate Peanut Toffee

1 T. plus 1 c. butter, divided
1 c. dry roasted peanuts, chopped, divided
1 c. sugar
1/2 c. packed brown sugar
1 T. light corn syrup
1 pkg. (10 oz) Nestle swirled milk chocolate & peanut butter chips

Line a 9/13 pan with foil. Coat foil with 1 T. butter. Sprinkle 3/4 peanuts over foil. Melt remaining butter in a medium, heavy-duty pan over medium heat. Stir in sugar, brown sugar and corn syrup. Bring to a boil. cook for 6 minutes, about 290 degrees on candy thermometer, stirring occasionally. Remove from heat.

Working quickly, carefully pour hot mixture evenly over nuts in pan. Immediately sprinkle with remaining nuts and chips over toffee. Press down lightly before chips begin to melt. Refrigerate for approximately one hour or until set. Remove foil; break into bite-size pieces. Store in airtight container at room temperature. Yield: 40 pieces.

Vast Emptiness

Well, that is what it does seem like, huh?
I spent the late summer, early fall taking care of tomatoes, apples, weeds, seeds, leaves, etc. Yes, I have been eating and cooking, but darn where does the time go??
Anyway, it is now November 17, 2006, and the days are gray, drab and entirely too short. Do you know that it was beginning to get dark at 4:30 in the afternoon...Wow! I am not ready for that yet...but it is here anyway!
There is only one way to combat the winter blahs & that is with cooking (up a storm, I might add) and cross country skiing. Since we don't have any snow yet, I am getting geared up to start holiday cooking. It really is fun to do, especially if you have family & friends to help you eat some of it. I don't know about you, but all of our activities this time of year revolved around eating...& that is good.
I absolutely love food that tastes good! How about you?
