Powdered Sugar Ginger Cookies

Ginger Cookies
Cream:
1/2 c butter
1/4 c shortening
1 c sugar
Mix rest of ingredients in order:
1 egg
1/4 c molasses
2 c sifted flour
2 tsp soda
1 tsp cinnamon
1 tsp ginger
1 tsp cloves
1/4 tsp salt
Roll in small balls & dip the tops in sugar.
Bake 375 degrees, cool for 1-2 minutes.
Shake in powdered sugar in plastic bag.
Cool.

Raspberry & Almond Shortbread Thumbprints

This is another delicious combination & could be great holiday cookies..."shortbread thumbprint cookie filled with raspberry jam, and drizzed with glaze."

Ingredients:
1 c butter, softened
2/3 c white sugar
1/2 tsp. almond extract
2 c all purpose flour
1/2 c raspberry jam

Glaze:
1/2 c confectioner's sugar
3/4 t almond extract
1 t milk

1. Preheat oven to 350 degrees.
2. Cream together butter & sugar until smooth. Mix in 1/2 t almond extract. Mix in flour until dough comes together. Roll dough into 1 1/2 inch balls, and place on ungreased cookie sheets. Make a small hole in the center of each ball, using your thumb & finger & fill the hole with jam.
3. Bake for 10-14 minutes until lightly browned. Let cool one minute on the cookie sheet.
4. Mix together the glaze ingredients until smooth. Drizzle lightly over warm cookies.

Carol's Recipe, Almond Raspberry Bars (Previous Post)

Dale & I were at Carol & Scott's the week-end following Thanksgiving & she had made these delicious Almond Raspberry Bars. I think I ate five (or possibly six) bars because I just loved them. Because I wanted the recipe, Carol suggested that Scott take a picture of it on his digital camera & then email it to me. And, it worked! So, I decided to send it to our desktop...& then upload it onto my cooking blog. Well, I was quite disappointed when I discovered that I couldn't read it because the print was too small. While trying to change it, I accidentally clicked on the recipe & it became very big...big enough for even mature (aka, old) eyes. So hopefully, you will be able to read it & follow the recipe if you so desire.

You won't be sorry...they are delish!!
