A Week-end for Soup

Just when we thought we were going to be able to get outside and enjoy Spring, it rains & it rains & it rains. So, I decided that it is a good day for soup. One of our most favorite homemade soups is chili and this is a delicious variation of chili with a Mexican twist & only hot if you choose the hot taco seasoning mix and hot chopped green chilies. We prefer the mild variation here on Aspen Avenue.
Taco Soup

Brown 1 # of hamburger and 1 chopped onion in medium size stew pot. (the one you make chili in is perfect).

Add the following ingredients to browned hamburger:

1-15 oz can diced tomatoes

1-15 oz can whole kernal corn

1-15 oz can tomato soup

1-15 oz can chili beans

1 small can chopped green chilies &

1 pkg taco seasoning mix

Add 1-2 cups water

Simmer for 15 minutes. Serve with chips, shredded cheese & sour cream.
