Lois Cooks Outside












Making/canning salsa outside has become a fun activity for me...it keeps the heat (& mess) out of the kitchen & being outside is so much better!
When we remodeled our kitchen last summer, we moved some of our cabinets & our old range & refrigerator into our garage with the intention of being able to can & have an extra oven when needed. However, we didn't finish our project because we don't have the electrical plug to be able to plug in the range...so, I am going to move that a little higher up on our priority list of things that need getting done! Our garage is insulated and we do have a heater, so it just makes sense to get it done.

Plum Tomatoes with Balsamic Vinaigrette

Ingredients: 6 plum tomatoes, sliced
1/2 c sliced red onion
3 T balsamic vinegar
2 T olive oil
1/2 tsp. sugar
1/8 tsp salt
1/8 tsp garlic powder
1/8 tsp pepper
4 fresh basil leaves, snipped

Directions: In a bowl, gently combine the tomatoes and onion. In a jar with a tight-fitting lid, combine the vinegar, oil, sugar, salt, garlic powder and pepper; shake well. Pour over tomato mixture; toss gently to coat. Sprinkle with basil. Serve at room temperature with a slotted spoon.
