Twins/Summer Refrigerator Relish


Well, I must admit, I'm hooked! I started watching the Twins at the beginning of the season and I am still watching them. I even go so far as to "plan" cooking when they are on TV. So, today I chopped the ingredients for this relish and threw it together prior to the 5th inning. This is the first time I have made it, but it just sounded good.


Summer Refrigerator Relish

Prep: 20 min

Chill: 24 hrs

6 c finely chopped cabbage

1 cup sugar

1/2 cup white or cider vinegar

1 1/2 tsp salt

1 tsp mustard seed

1/2 tsp celery seed

2 medium cukes, shredded

1 medium red bell pepper, chopped


1. Mix all ingredients in large bowl. Spoon into 1-qt jar & 1-pt jar.


2. Cover and refrigerate at least 24 hours but no longer than 2 weeks.


And, now the good news: 1/4 c = 40 calories!

I envisioned this ontop of a burger or BBQ or brat or polish, it looks beautiful and fresh. I haven't tasted it yet...but will tomorrow.
